Michael and Rob,
The Chang and the Eng cocktails at the reception were fabulous! Highly subtle and distinct flavors conjoined together in a cocktail glass created a complex drink that one wanted to sip slowly to enjoy the nuances of each ingredient. The layer of frothy egg white mixture with absinthe was subtle but complex. I had to resist the compulsion to just throw it all down, because as the flavors mixed together, it became a different taste experience. The Siamese twins would have been proud of these creations and have suffered a certain amount of pain if separated from these drinks. Cheers!

Alas, I haven't yet done that. But your comment is a good reminder and I'm resolved to try it!

I enjoyed a stroll through this blog this evening. Very nice.

I want to know if you ever smoked the orange rind for the "smoked sidecar" variation. That sounds like it might just work well!

The Rum cocktail you refer to was a Calypso, which I took from Anthony Dias Blue's Complete Book of Mixed Drinks. Oddly, the book was published in 1993, when falernum was nearly, if not completely, impossible to find. The drink was prepared with Appleton rum, Velvet Falernum, pineapple, fresh lime, and Angostura bitters.
